Nutrition News! #recipes

Nutrition news!!

well...I'm about a week behind but, my niece did such a great job on this post I wanted to publish it! 

Today [last week] is known as "Johnny Appleseed Day"! Way back in the 1770's Johnny was known for planting apple trees throughout Ohio, Pennsylvanian, Indiana and Illinois, he was very kind and today is known as an American Figure for his leadership. He was also a missionary, There is many museums and Historical places dedicated to Johnny "Appleseed" Chapmen.


In honor of Johnny "Appleseed" here are a few yummy recipes from apples!

Johnny Appleseed walked almost everywhere he went. He preferred to walk and carry his apple seeds with him. Some say he once walked 15 miles through rain and snow. So a little walking/jogging every now and then wont hurt!

The Art of Seasoning



Too many people believe "healthy" food is bland and tasteless. Did you know that foods that are good for you can taste good too? All you need to know is the basics to seasoning with herbs and spices. Once you have your spice rack filled, food will no longer be boring and bland. The list below gives you a great overview of different herbs and spices that compliment certain foods. Enjoy!


Beans (dried) — cumin, cayenne, chili, parsley, pepper, sage, savory, thyme


Beef — basil, bay, chili, cilantro, curry, cumin, garlic, marjoram, mustard, oregano, parsley, pepper, rosemary, sage, savory, tarragon, thyme


Breads — anise, basil, caraway, cardamom, cinnamon, coriander, cumin, dill, garlic, lemon peel, orange peel, oregano, poppy seeds, rosemary, saffron, sage, thyme


Cheese — basil, caraway, celery seed, chervil, chili, chives, coriander, cumin, dill, garlic, horseradish, lemon peel, marjoram, mint, mustard, nutmeg, paprika, parsley, pepper, sage, tarragon, thyme

Complimentary Herbs

As a beginner, you may want to stick with herbs and spices that are known to complement each other. Common flavor families include:


Bouquet Garnis — basil, bay, oregano, parsley
Herbal — basil, marjoram, rosemary, thyme
Hot — chili peppers, cilantro, cumin, garlic
Pungent — celery, chili peppers, cumin, curry, ginger, black pepper
Spicy — cinnamon, ginger, black pepper, star anise
Sweet — allspice, anise, cinnamon, cloves, nutmeg

One of my favorite side dishes
Ingredients
15 ounces of Chick Peas
1 T Chili Powder
1 1/2 t Cumin
1/2 t Paprika
1/4 t Dried Oregano
1/4 t Garlic Powder
1/4 t Onion Powder
1 t Black Pepper
1 t Sea Salt

Play with this until you get YOUR preferred taste! 

Directions
Heat peas with preferred method of heating.
Lightly coat peas with seasoning mix
Serve with meal or have as a snack.
Enjoy!
 Herbed Quinoa


 Ingredients/Directions
On stove top boil 1 Cup water and 1 Cup Low Sodium Chicken Broth
Add 1 Cup quinoa
Bring to a simmer
Place lid on and let sit for 12-15 minutes
Or until all liquid is absorbed

 Once cooked place in large bowl and add in your seasoning!
1/4 cup chopped fresh basil leaves
1 teaspoon Garlic
1/4 Cup olive oil
salt and pepper TT
Mix together and serve!


 Any left over quinoa I add to my salads for the rest of the week! Hello protein!!

Taco Casserole

After three years of getting spoiled by my husband's fabulous cooking, I have now been asked to start pulling my weight in the kitchen. I will be honest with you, I am scared of the kitchen. Honestly, I can cook, I just get overwhelmed and a little paranoid that something is about to catch on fire. Flour is always near by in case of an emergency. The past few weeks I have really enjoyed being in the kitchen. This may have of helped =) INSERT WINE! I just have to make sure to plan and prepare.


I am feeling like an actual wife. Maybe, I'm not Betty Crocker status but I'll get there.

 

This taco casserole was very easy and it is husband approved!!



Ingredients

2/3 cup uncooked brown rice
1-1/3 cups plus 4 to 5 tablespoons water, divided
3/4 cup all-purpose flour
3/4 teaspoon baking powder
1/8 teaspoon salt
2 tablespoons cold butter
1/2 pound lean ground beef (90% lean)
1/2 cup chopped onion
1/2 cup chopped green pepper
2 garlic cloves, minced
1 cup water
1 envelope taco seasoning
2 eggs, lightly beaten
1/4 cup minced fresh cilantro
1 cup (4 ounces) shredded reduced-fat cheddar cheese
2 cups shredded lettuce
2 medium tomatoes, chopped
3/4 cup salsa
1/2 cup fat-free sour cream

Directions

  1. In a small saucepan, bring rice and 1-1/3 cups water to a boil. Reduce heat; cover and simmer for 30-35 minutes or until rice is tender and water is absorbed.
  2. Meanwhile, in a large bowl, combine flour, baking powder and salt; cut in butter until crumbly. Stir in enough remaining water to form a soft dough. On a floured surface, roll dough into a 12-in. x 8-in. rectangle. Press into a 13-in. x 9-in. baking dish coated with cooking spray. Bake at 400° for 13-15 minutes or until very lightly browned.
  3. For filling, in a large nonstick skillet, cook the beef, onion, green pepper and garlic over medium heat until meat is no longer pink; drain. Add water, taco seasoning and cooked rice. Bring to a boil. Reduce heat; simmer, uncovered, for 2-3 minutes or until thickened. Remove from the heat. Stir in eggs and cilantro. Spread over crust.
  4. Cover and bake for 15-17 minutes or until filling is set. Cut into squares. Top with cheese, lettuce and tomatoes. Serve with salsa and sour cream.
