Day 7 of the 7-Day Green Smoothie Challenge

Well, this is it, the last day of the 7-Day Green Smoothie Challenge. I may, by default, find myself waking up in the morning and heading straight to the blender! Thank you to the hosts of this challenge.

Katherine:  Real Food Runner
Ashlee: ABpetite

I hope when you host it again it reaches twice as many people. Smoothies are a great way to add in nutrient-rich foods that you may not otherwise touch! What I enjoyed most about this challenge was that it inspired me to try new vegetables, fruits, and recipes. I absolutely loved Ashley's video making her full on veggie green smoothie. There were some priceless looks and reactions! But, kudos to her for attempting it. If you haven't had the opportunity to check out Days 1-7, please follow the links below.

My favorite recipe was day two's pina colada green smoothie. I can't get enough of coconut. Today's smoothie was inspired by our host over at real-food-runner. I have a ton of apples to eat up so what a perfect way to use them. I have never tried apples in a smoothie before. I'm calling this The Baked Apple Green Smoothie!

2 Cups Spinach
1/2 Cup Vanilla Soy Milk
6oz Apple and Kale Juice (freshly juiced)
1 skinless gala apple, chopped
1 T flax seed
1t Cinnamon
1t brown sugar
1t pure maple syrup

Blend greens with liquids then add in fruit and blend till smooth! You will get more of a juice consistency. Enjoy!
