Catch Up

I thought I would take the time to play catch up with you guys. Perhaps, you have not noticed, but I have been MIA in blogger world. Just like your life I'm sure, things are a a bit crazy in the Huggins Household.

Graduate School
Last summer I ventured back to the books and started graduate school. I am currently majoring in human nutrition which will earn me a Masters of Science in Human Nutrition. Yup, I will be Cindy Huggins, MS, RDN, LD! Gosh, I can't wait. I honestly love to learn so I thought working full-time and going to school part-time would be a piece of cake. Boy was I wrong. It is like I have forgotten how to organize my life and I am just going day-to-day, which I cannot stand!!

 What I have been eating lately!
1. Stuffed pita with hummus, rotisserie chicken, spinach, and feta cheese. On the side whole wheat egg noodle mac and cheese!
2. Low-Fat Chicken Salad with spinach and spicy mustard. On the side- vegetarian chili
3. Chicken Salad over Kale!
4. Kashi cinnamon cereal with blueberries.
5. GiGis cupcakes. For Brians birthday I took him here and he picked out a dozen cupcakes...and we ate every one.
I am still obsessed with green smoothies and just took the 30 day simple green smoothie challenge. This one I called strawberrycolada. Spinach, pineapple, banana, strawberries, coconut oil, and coconut milk. 
My other favorite recipes:

Almond Joy
Serves 2
2 cups fresh kale, stems removed
2 cups almond milk
1 banana
2 pears, ripe
2 tablespoons coconut flakes
2 tablespoons cacao powder

Dreamsicle
Serves 2
2 cups fresh spinach
1 cup fresh orange juice
1 cup water
2 oranges, peeled
2 bananas
1 teaspoon vanilla extract

Coconut Dream
Serves 2
2 cups fresh kale, stems removed
2 cups coconut milk, unsweetened
1 cup mango
1 cup pineapple
1 banana
2 tablespoons coconut flakes, unsweetened


I am now writing food reviews for The Planet Weekly Magazine. I love it! I get to eat some wonderful and not so wonderful food.
Having been injured for a few months it has been hard for me to get motivated to exercise.  Unfortunately, I developed "runners knee". But, I am slowly recovering, but it's hard to get back in the groove of things. And since snow apocalypse 2014 hit Bama, running outside has not been an option. So I am taking it slow. I walk during lunch at work and tray to run 2-3 miles on most days during the work week. I have a half marathon in 18 days!!! In addition, I have been participating in the MNB Challenge. 
I am also obsessed with mason jars! When I am food prepping for the week I stuff everything in them. I make up smoothies on Sunday and freeze them in mason jars. The night before I take them out and place them in the frig and they are good to go the next morning. Salads stay well in the jars too. In this salad I have grapes, feta, apples, and spring mix. I eat it with raspberry vinaigrette.In addition to the smoothies and salads I pack up low-fat chicken salad with greens. I sure am getting in my veggies these days! 
Cats, cats, and more cats. Amino Acid sleeps pretty in the top left and Zoey relaxes in the bottom left. These are our real cats. As for the cats on the right...they are our neighbors cats. I often come home to them in our apartment. Brian has even fixed them a little bed outside for when it gets really cold out.
