National Nutrition Month


If you haven't guessed already March is National Nutriton Month (NNM). This month is like a dietitian's Christmas Holiday. NNM is a time to return to the basics of healhty eating. This year, The Academy of Nutrition and Dietetics encourages us to "Eat Right, Your Way, Every Day."
You can eat right and still enjoy the foods you love with a plan tailored for your lifestyle, traditions, health needs and of course, tastes.
Make sure your healthy diet centers around you! All of us have different health goals, so no one diet plan should work for everyone. To find a registered dietitian in your area go to Eat Right.org  To learn more about building a healthy plate visit choosemyplate.gov! Happy Eating!

My St Paddy's day disaster...

In my earlier post about St Patrick's day treat: mint chocolate meringue I bragged on my baking skills-prematurely to find out. My meringues were terrible tasting...if they could make it to your mouth before crumbling to pieces. So, Error #1: I replaced caster sugar with splenda (I just couldn't find caster sugar and I didn't have a coffee grinder) Error #2: Cooked too long (In my defense I followed the directions. Apparently every oven is different). Error #3: Too much mint extract (that stuff is powerful, one slip and you're done for!) Error #4: Baked them on wax paper (I know, I know....::shameful head nod::)

Plus vanilla extract!






They were WAY too sweet (thanks to splenda). Brian tried to eat them, bless his heart. Oh, the growing pains of being a newlywed and learning to cook. Please, keep reading as I continue my struggles and successes! Mission: Healthy Huggins (and a wife that can cook) =)

Superfood: Garlic

Ever thought of using food as medicine? Garlic is a herb and powerful super food. Garlic has been used to treat high blood pressure, coronary heart disease, heart attack, and atherosclerosis. Brian and I could put garlic on everything! He loves to use fresh garlic. This tip is for those who are scared to use fresh, it's so easy!

Tip of the Day from The Academy of Nutrition and Dietetics

How to Roast Garlic
Roasted garlic and breadWhen roasted garlic caramelizes and its sharp bite mellows, it's a delicious spread on warm, crusty bread and adds layers of flavor to many recipes. To roast garlic at home:
  • Preheat your oven to 400 degrees Fahrenheit.
  • Take a garlic bulb and remove the excess papers, making sure the bulb stays intact.
  • Cut ¼ inch off the top of the bulb to reveal the actual cloves of garlic.
  • Place it on a sheet of foil.
  • Cover with a half a teaspoon of olive oil.
  • You can sprinkle with salt and pepper.
  • Wrap the foil.
  • Place on a baking sheet.
  • Bake for 30 to 40 minutes or until garlic is fork tender.
When done, let the garlic cool for five minutes, pick up the entire bulb and squeeze out the roasted cloves.

St. Patrick's Day treat-mint chocolate meringue

 Are you eating corn beef and cabbage this Sunday? Check out the Academy’s Tip of the day! In honor of St. Patrick's Day I'm actually going to be the one in the kitchen. I have told you that my wonderful husband does 95% of the cooking, right? If I cook it's one of three things: spaghetti, tacos, or I pick up a rotisserie chicken and we have Greek salads or pita sandwiches. I have asked Brian to enter me in the Food Network show "worst cooks ever." A dietitian that can't cook..?? Of course they would let me be a contestant. What I have found that I really love to do and I'm pretty good at it is baking. I laughed out loud the other day when I found out that my best friend was baking cupcakes for the first time...in her life...she's 27. They were excellent btw. One of my favorite treats to bake is white chocolate raspberry cupcakes! I'll share the recipe soon. This weekend I am going to bake some St. Paddy's Day Mint Chocolate MeringuesHealthy Aperture is a great resource for healthy recipes. Registered Dietitian Day

National Nutrition Month

RDN Day is 3/9/16

If someone asked you what you did what would you say? I say that I give people hope with a large sense of relief. How? Imagine having a chronic disease that doesn't allow certain foods; now imagine having 2 different diseases that doesn't allow certain food. Continue to imagine more then 3 diseases which restricts 90% of the food you eat on a daily basis. How do you feel? Lost? Confused? Discouraged? Each moment of your day is spent wondering, "if I eat this will my body allow it or reject it?" My job allows me to give others hope through nutrition education and counseling. I have seen tears of joy and felt hugs of great relief. I'm not sure what you think a dietitian does but please take the time to find out what one can do for you and your family.

Just a few weeks ago I was sitting in a waiting room when a gentleman noticed my medal from a race I had ran that morning. Our conversation led to my career and it ended with him thanking me for making our community healthier. What a great feeling! I never dreamed I would have such a rewarding career. I am inspired daily by my patients, clients and fellow RD's. Today is Registered Dietitian Day! This day is in honor of celebrating RD's and their commitment to making our community healthy! Eating disorders

Since the beginning of the year I have been glued to all of the award shows from the Grammys to The Academy Awards.  As an actress (use that term loosely) I am anxious to hear the winners, as a female I am not so eager to see the size 0 actress walk the red carpet in her fabulous gown. I have a bad tendency to compare my body to theirs. Some would say it is human nature to compare you to others, but when is it considered an issue?
Each ceremony has a witty host (well witty writers) bantering jokes about how Hollywood “got the flu” or went on the “hunger games diet” to fit into their dresses. Superficial jokes at the time but all too real for those who struggle with an eating disorder. A couple of weeks ago represented National Eating Disorder Awareness week (I’m sorry I’m behind!). The theme was “Everybody Knows Somebody” that has been affected by eating disorders.  
  The NEDAwareness mission:
“The aim of NEDAwareness Week is to ultimately increase outreach and awareness of eating disorders and body image issues, while reducing the stigma surrounding eating disorders and improving access to treatment resources. Eating disorders are serious, life-threatening illnesses - not choices - and it's important to recognize the pressures, attitudes and behaviors that shape the disorder.”

People with eating disorders are typically classified as those who purge after eating (bulimia nervosa) or those who starve themselves and have excessive weight loss (anorexia nervosa).  There are two additional types of eating disorders: binge eating disorder and eating disorder not otherwise specified.  According to The National Eating Disorder Association, you do not have to be diagnosed with anorexia nervosa or bulimia nervosa to have an eating disorder. You may have certain signs and symptoms that need to be addressed before it leads to a more life threatening eating disorder.
As I asked earlier when is it considered an issue?
Are you constantly thinking about your weight? Does it put you into a depressed state?
Do you binge eat?
Do you feel guilty after eating?
Does food control your day?
Do you exercise for extreme periods of time or multiple times a day without feeding your body properly?

If you have answered yes to any of these I highly recommend to go to mentalhealthscreening.org and take the Free, Anonymous screen.

I was reading an article last week which spoke about a young girl whose eating disorder started in kindergarten.  You can read this article here. This is a topic near and dear to my heart because Brian and I have beautiful nieces and to think that they may struggle with an eating disorder is heart breaking.
